The Goat Ranch
There is in Wilson County, very close to the town of Floresville, a place that is very important to the History of the South Texas Region. Las Cabrisas, the Goats.
In San Antonio, there are a series of Missions, most famous the Alamo, however there are others there, created to support each other, and convert the local 'Indian' population to Christianity, the Missions were a wondrous thing, and to this day are there, all one must do is take the Mission Trail and visit them, the Alamo, with the History of the Texas Revolution, San Jose, and the great window, Conception, and the aqueducts. All of them within close distance to each other.
The one thing missing is the food, what did the population eat? Where did it come from? In the just recent past an archeological find has answered some of this.
If you drive down highway US 181 from San Antonio, the first town of consequence is a town named Floresville, if you continue through the town, and take Texas 97 South, toward Plesanton, you will soon see a Dairy on your left. This is the location of the Las Cabrisas. The area is native Texas Plains, brush, thorns, snakes, and gotchas. (for those not of the prairie, a gotcha is anything that grabs, bites, irritates or in general causes you discomfort and you cannot identify it specifically.) There are digs going on to discover the entire scope of the operation, but from this Rancho, out in the prairie of Texas, cattle and goats came forth to supply the missions, as well as supplement the grains and vegetables.
